Menu Plan March 19-25

Spring is here!  Although I was really hoping for at least one good snow this winter I”ve decided to just enjoy the glorious weather we have been given.  (I’m still not convinced we won’t have snow on Easter though.)  After making dinner tonight (in a house without air conditioning) I think we will be focusing on lots of CrockPot or stove-top meals.  🙂       

Monday:

  • Breakfast: Applesauce Spice Muffins, Milk
  • Lunch: Leftovers from my birthday. 🙂
  • Dinner:  Baked Cod, Sweet Potato Fries (oven baked), Salad

Tuesday:

Wednesday:

Thursday:

  • Breakfast: Yogurt with Homemade Granola
  • Lunch: Sneaky Potato Soup, Salad
  • Dinner: CrockPot Beef Enchiladas-our favorite crockpot meal!

Friday:

  • Breakfast: Sausage Breakfast Casserole, Toast
  • Lunch: Leftovers
  • Dinner:  Spaghetti with Sesame Italian Bread
  • Snack: Popcorn

Saturday:

  • Breakfast: Homemade Granola Bars made from the Homemade Granola earlier in the week, Fruit
  • Lunch: Chicken Salad Sandwiches on the road
  • Dinner: on the road.  I am going on a road trip this weekend to see a friend, details to follow next week.  Can’t wait!  I’m planning on taking a medium sized cooler full of snacks for Eli and myself.  🙂

Sunday:

  • Breakfast: Granola Bars, hard boiled eggs, bananas.
  • Lunch: on the road
  • Dinner:  Chicken Veggie Casserole

Menu Plan Jan. 2-8

We were blessed to celebrate a wonderful Christmas and New Year’s.   Hope you and your families had a blessed Christmas.  We are settling in well to our new home and welcomed our first real snow today!  Hooray!  I’m sure lots of sledding is in our future this week so we will be keeping the menu fairly simple.            

Monday:

  • Breakfast: Sunshine Muffins (Carrot-Raisin Muffins), Milk
  • Lunch: Out with friends to a chili parlor
  • Dinner:  Chicken Noodle Casserole with Mixed Vegetables

Tuesday:

  • Breakfast: Yogurt and Leftover Muffins
  • Lunch: Zuppa Toscana Soup (just like Olive Garden), Grilled Hummus & Cheese
  • Dinner: We call it the Moe’s Meal: Chicken, Rice, Salsa, Beans, Cheese
  • To Do: Make Homemade Bread

Wednesday:

  • Breakfast: Overnight Crockpot Oatmeal with Apples
  • Lunch: Lentils and Rice with Cheese
  • Dinner: Pork Chops, Sweet Potatoes, Green Beans, Homemade Bread

Thursday:

  • Breakfast: Sausage, Pancakes, Eggs
  • Lunch: Leftovers
  • Dinner: @ Church
  • Snack: Crockpot Mexican Dip and Chips

Christmas Week Menu Plan

It is hard to believe that there is less than a week left before Christmas.  With our big move this month I think it is just now starting to feel like Christmas the past couple of days.  Hopefully we will actually be able to put up our Christmas tree tomorrow.  We spent a delightful evening yesterday Christmas caroling.  The Christmas Spirit is definitely alive in our home despite the lack of decorations.  🙂          

Monday:

  • Breakfast: Leftover French Toast Apple Strata: This is a wonderful dish to make around Christmas.  It can be assembled the night before and then put in the oven in the morning.  (I often make it when we have house guests.)  We may end up making it again on Christmas day. 😉 
  • Lunch: Leftover Chicken and Mushroom Stew over Rice.
  • Dinner: Leftover Roast-I made this the other day and for some reason it took forever to cook so we ended up making pancakes for dinner.  Everyone has those days right?   
  • To Do: Make Homemade Bread-I found all of the parts to my mixer yesterday!  Hooray!

Menu Plan Dec. 5-Dec. 11

As most of you probably already know we have MOVED!!!  We are super excited and are loving our new church home.  Sorry for the break in blogging (my longest ever).  Life was way to crazy during the move to keep it up.  We moved last Saturday.  Life is still pretty crazy for us but I do see the light at the end of the tunnel.   As far as our menu goes it’s been pretty interesting around here.  🙂  I don’t know the last time I have been this creative in our cooking.  I’ll start to make something and realize oh wait I haven’t found the potato peeler yet.  Anyway here is what our super simple menu has looked like this week:         

Monday:

  • Breakfast: Coco Wheats, Yogurt, Banana   
  • Lunch: Grilled Ham and Cheese, Broccoli Cheese Soup, Carrots
  • Dinner: Fancy Smancy Dinner out with a bunch of area pastors and their wives.  (It was lots of fun.) 
  • To Do: Soak Oats overnight for breakfast

Tuesday:

  • Breakfast: Soaked Oatmeal, Yogurt.  
  • Lunch: Lunchmeat Sandwiches (These were a real treat for us this week.  We usually don’t buy lunchmeat since it is so expensive.)  
  • Dinner: Spaghetti, Side Salads, Rolls.

Wednesday:

  • Breakfast: Scrambled Eggs, leftover Soaked Oatmeal, tea
  • Lunch: Lunchmeat Sandwich, Veggie Sticks
  • Dinner: Chicken Casserole-A super sweet lady in our church sent it over via her hubby.  I was so thankful!  I had been trying to figure out what in the world I could fix and he showed up with a casserole.  It was delicious too! 

Thursday:

  • Breakfast: Coco Wheats, Yogurt, Banana.
  • Lunch: IHOP-No your eyes aren’t fooling you we went out for brunch.  🙂 
  • Dinner: Crockpot BlackBean Chili over Spaghetti 

Friday:

  • Breakfast: Yogurt, Granola Bars
  • Lunch: Beef Skillet  
  • Dinner: kale, potatoes, sausage, leftover rolls. 
  • Snack: Popcorn (if I find the popcorn maker) 😉 

Saturday:

Sunday:

  • Breakfast: Pumpkin Chip Muffins, hard boiled eggs, bananas.
  • Lunch: Beef Patties, Noodles, Green Beans. 
  • Dinner: TBA Eli is having a family birthday party!

Menu Plan Oct. 10-16

11 Oct

 Except for the warm weather we have been having it feels as though fall is here.  There are some fun fall decorations in our home and we are looking forward to picking a pumpkin tomorrow.  Everyday it seems that the leaves turn just a little bit more.  In the mean time I have been having a great time putting up apples with Elijah.  So far we have made applesauce, canned apples, apple butter, pear-applesauce, and apple jelly.  We can’t wait to enjoy them this winter.  🙂  This week’s menu will be pretty simple with a few fall favorites thrown in.  I’m looking forward to using our oven a little bit more as the weather turns cooler.        

Monday:

  • Breakfast: Cream of Wheat, Tea, yogurt  
  • Lunch: Grilled Cheese, sautéed Mushrooms
  • Dinner: Chili at Small Group
  • To Do: Thaw Pork Tenderloin

  • Breakfast: French Toast, Tea
  • Lunch: Egg Salad Sandwich, Veggie Sticks  
  • Dinner: Baby Shower.  Brandon is having leftover soup or eating out.  

Friday:

  • Breakfast: Yogurt, Granola
  • Lunch: Sandwich or Salad, carrots  
  • Dinner: at a friend’s house: Take Fall Bread 

Saturday:

  • Breakfast: Sausage, Pancakes, Eggs  
  • Lunch: Leftover Soup, Grilled Cheese
  • Dinner: Beef Skillet with cabbage

Menu Plan Week of Aug. 21

23 Aug

This week is a big one in our family.  One brother is being deployed to Iraq while another one turns 16!  Looks like we will be sticking with lots of family favorites this week.

Update: The Dutch Oven has been so much fun.  It cooks great!  I have been using it mainly as cooking pot on top of the stove but look forward to using it in the oven once the weather cools down.    

Monday:

  • Breakfast: Baked Oatmeal, Fruit. 
  • Lunch: Bean Soup, sautéed Cabbage, Fruit
  • Dinner: Kale, Potatoes, Sausage, Buttermilk Cornbread

Tuesday:

  • Breakfast: Coco Wheats, Fruit, Milk
  • Lunch: Leftover Bean Soup, Cornbread
  • Dinner: Sausage, Quinoa, Peppers     

Wednesday:

Thursday:

  • Breakfast: Apple Brown Rice Pudding,
  • Lunch: Egg Salad Sandwich, Veggie Sticks  
  • Dinner: Favorite Fish, Baked Potatoes, Broccoli

Friday:

  • Breakfast: Yogurt, Granola
  • Lunch: Leftovers
  • Dinner: Homemade Ham and Pineapple Pizza   

Saturday:

  • Breakfast: Muffins and Fruit on the Go 
  • Lunch: Out-brother’s deployment  
  • Dinner: Out

  • Lunch: Brunch: Waffles, Scrambled Eggs,

Menu Plan Week of Aug. 15

16 Aug

After a fun-filled vacation with just the hubby we will be eating in most of the next few weeks.  🙂  I’m hoping to try a few new recipes using my new Dutch Oven and some old family favorites as well. 

Monday:

  • Breakfast: Cereal, Milk, Banana
  • Lunch: Bean Quesadilla, Stewed Tomatoes
  • Dinner: Chili Macaroni Casserole, Fruit Salad.

Tuesday:

  • Breakfast: Toast with Fried Eggs, Banana 
  • Lunch: Olive Garden Zuppa Toscana
  • Dinner: Out using a BOGO coupon at Logan’s.  (Brandon’s reward for getting family pictures made.)    

Wednesday:

  • Breakfast: Baked Apple Oatmeal in the Toaster Oven, Raspberries, Milk
  • Lunch: Grilled Hummus Sandwich with Zuppa Soup
  • Dinner: Leftover Chili Mac and Zuppa Soup    
  • To do: Thaw chicken

Thursday:

  • Breakfast: Vegetarian Quiche
  • Lunch: Egg Salad Sandwich, Veggie Sticks  
  • Dinner: Chicken and Dumplings with Mixed Veggies Healthy Style 🙂
  • To Do: Soak Black Beans, Make Yogurt

Friday:

  • Breakfast: Cream of Wheat, Yogurt
  • Lunch: Leftover Soup, Chicken Salad
  • Dinner: Black Beans and Rice with Taco Bar type toppings   
  • To Do: Bake Muffins, Prep Breakfast Casserole

Saturday:

  • Lunch: Brunch with Friends: Muffins, Sausage Egg Casserole, Fruit  
  • Dinner: Leftovers

This week we are preparing for a sweet friend’s wedding, a baby shower, and looking forward to a fun-filled weekend with old friends. 

Monday:

  • Breakfast: Toast with Fruit, Milk, Tea
  • Lunch: Leftover Roast
  • Dinner: Beef Barbeque, Cole Slaw, Potato Salad

Tuesday

  • Breakfast: Granola Bars, Nectarine
  • Lunch: Mushroom Burger sans the meat (very good although Brandon says it sounds like the worst thing ever a burger with no meat), Squash with Onions 
  • Dinner: 40 Clove Chicken, Bread, Baked Sweet Potatoes, Salad  

Wednesday:

  • Breakfast: Oatmeal, Fruit, Tea
  • Lunch: Leftovers 
  • Dinner: Small Group: Take Homemade Potato Salad, Homemade Cole Slaw (recipes coming soon), Peach Tea  

Thursday:

  • Breakfast: Banana Chocolate Chip Muffins, Hard Boiled Eggs
  • Lunch: Pack Lunch: Hummus Sandwiches, Veggies, Hard Boiled Eggs for Eli
  • Dinner: Crockpot Pork Roast with Apples and Sweet Potatoes, Salad.  (This is a new recipe if it’s good I”ll post it.)

Friday:

  • Lunch: Leftover Pork Roast and Veggies

Menu Plan May 22-29

25 May

This week we are adjusting to non-student life!  We will be trying some new recipes and enjoying some old favorites as well.  With summer fast approaching I am working on a bunch of menus that do not require turning on the oven.  🙂  We haven’t yet turned on our air and I would like to get by another week or so. 

Monday:

  • Breakfast: Oatmeal and bananas
  • Lunch: Middle East Tuna Salad-coming soon 😉
  • Dinner: Mustard Crusted Tilapia, Rice, Mixed Veggies, Bread, Jello with Fruit.

Tuesday

  • Breakfast: Toast, Eggs
  • Lunch: Toasted Tuna Salad Sandwich with Spinach
  • Dinner: Favorite Fish, Lemon Basil Carrots, Rice.  (We had fish 2 nights in a row because we were expecting my family for dinner on Monday and they weren’t able to make it.) 

Wednesday:

  • Breakfast: Blueberry Muffins
  • Lunch: Spalding Southwest Beans and Rice
  • Dinner: Pasta with Basil and Tomatoes, Bread

Thursday:

  • Breakfast: Granola Bars, Fruit
  • Lunch: Beans and Rice
  • Dinner: Out with Friends

Friday:

  • Breakfast: Blueberry Muffins, Scrambled Eggs
  • Lunch: Leftovers
  • Dinner: Lentil Pot Pie, Parmesan Asparagus  

Saturday:

  • Breakfast: Brandon’s Choice: probably Waffles, Sausage, Eggs
  • Lunch: Beef and Noodles Stroganoff, Green Beans
  • Dinner: Bean Burritos, Salad

  • Breakfast: Healthy Applesauce Cake
