Banana Chocolate Chip Muffins

Perfect for breakfast or a snack for everyone.

We have been making these muffins for years.  They are wonderful!  I recently gave one to Eli and he loved it.  To make:

  • Ingredients:
  • 1/2 c. of coconut oil or butter
  • 3/4 c. sucanat or sugar
  • 2 eggs
  • 2 c. whole wheat pastry flour (any kind of flour will do-these are great with ww pastry flour)
  • 1 t. baking soda
  • 1/2 t. salt
  • 3 ripe bananas
  • 1 t. vanilla extract
  • 1/2 c. mini chocolate chips

Cream butter and sugar together.  Add eggs and beat well.  Add flour, salt, and soda-mix well.  Add in bananas, extract and chocolate chips.  Bake at 400 for about 18 minutes depending on your oven.  Yields one dozen large muffins (fill muffin pans 3/4 of the way) or 1 1/2 dozen small muffins.  Enjoy!

    Where do you find you whole wheat pastry flour? I have been looking for it for some time now…

      We purchase our whole wheat pastry flour at Grandview Country Store for 0.63 a pound. It is located in Cynthiana though. (I always stop when we are on our way to visit my parents.) I know Whole Foods sells it but it is quite expensive from them. You might also be able to ask your local grocery store to special order some in for you. I can pick you some up if you would like the next time I stop by (probably sometime next week). Just let me know and how much you would like!
