Menu Planning Monday Feb 7-13

This week we are looking forward to enjoying some meals with family.  We will also be keeping it fairly simple this week to allow more time for some spring organizing and closet cleaning.  🙂 


  • Breakfast: Apple Cranberry Muffins, Smoothie for Brandon.  (He takes one with him a couple times a week drinks it in the car on the way to work.)
  • Lunch: Chicken, Veggie, and Biscuits Casserole,  Salad, Herb Bread.  
  • Dinner: Wild Rice and Turkey Crockpot Dish, Veggies, Herb Bread
  • To Do: Make Yogurt, Bake Herb Bread, Thaw Chicken.


  • Breakfast: Yogurt, Blueberries, Homemade Granola
  • Lunch: Leftovers
  • Dinner with Bryan and Renee (menu subject to change) 😉 : Baked Herb Chicken, Lemon-Basil Carrots, Green Beans, Bread, Apple Pie?
  • To Do: Bake Apple Pie


  • Breakfast: Muffins, Cottage Cheese, Fruit.
  • Lunch: Chicken and Noodle Veggie Casserole
  • Dinner: Flavorful Fish, Mrs. Karen Green Beans, Sweet Potatoes.
  • To Do: Thaw 1/3 pound Hamburger


  • Breakfast: Orange Spice Rice Pudding
  • Lunch: Hamburger Macaroni Skillet, Veggies.
  • Dinner: leftovers
  • To Do: Thaw hamburger, sausage.


  • Breakfast: French Toast, Bacon, Fruit.
  • Lunch: Beef Enchiladas
  • Dinner: Lentil Rice Casserole


  • Breakfast: Apple Puffed Oven Pancake
  • Lunch: Leftovers
  • Dinner: Beef Barley Stew, Grilled Cheese


  • Breakfast: Cream of Wheat and Fruit
  • Lunch: Fettucine Alfredo with Broccoli and Chicken, Carrots
  • Dinner: Chilli, Buttermilk Cornbread (at the bottom of the page), Veggie Sticks and Dip

 In case you are wondering our menu often changes in regards to when we have a certain meal.  🙂  For example, sometimes we decide to make Thursdays meal on Wednesday night instead.  The menu is great because I don’t have to dream things up on the spot.  I look at it in the morning and know exactly what we are having for supper or if that doesn’t sound good at the moment I’ll just switch it out for another day.

    you’re so organized, its awesome =)

    sooo i don’t mean to be a pain or any trouble, but i haven’t been able to eat chicken (or eggs or pasta) since i’ve been pregnant–i don’t want to mess up your menu plan for the week, so i can cook something and bring it for the entree (or bring something for myself that i know i’ll eat, since i’m so picky nowadays!) or we can even pick up some pizza? just let me know what you want to do! i hate being a picky eater, i used to eat anything and everything before i was pregnant!

      No trouble at all. It’s very flexible. 🙂 I hated eggs and chicken for a while too but after I made myself eat chicken it helped with the morning sickness. Just a few bites seemed to help. I really would love to make something for you. Does anything else besides pizza sound good to you right now…fish, meatloaf, vegetarian dish?, soup etc? Are you still okay eating vegetables? Basically I’ll just let you pick what you want for dinner and see if I can come up with something how does that sound? I love a good challenge. 🙂 I’d rather not do pizza as I”m trying to loose weight. 😉

    So is the beef enchiladas the one for the crock pot? I have a great recipe for tacos. Actually its the hubby’s. Lol

      Yes it goes in the Crockpot. I’ll try to share it sometime soon. We LOVE it. It’s quick, easy, delicious, and probably pretty good for you. 🙂
