Looking for a new egg dish or a way to incorporate spinach into your menu this week? Try this simple Spinach Frittata. It is yummy and sure to be a hit with the whole family.
- Spray the bottom of a pie pan with non-stick spray. Sprinkle 2 T. wheat germ (or bread crumbs) in the bottom of the pan.
- Combine together in a bowl: 2 T. wheat germ, 3/4 c. cheddar cheese, 1 8 package of frozen chopped spinach thawed and squeezed (to drain out the water), 1 cup cottage cheese, 3 beaten eggs, 1 T. olive oil, 1 t. nutmeg, 1/4 cup Parmesan cheese, and a dash of salt/pepper.
- Place mixture in pie pan. Sprinkle with 1/4 c. cheddar cheese.
- Bake at 350 for 45 minutes.

Too cute not to share. Eli's first real eggs. He didn't actually eat them but later loved the frittata. I must be quite the boring breakfast date because I was sitting right next to him talking when he fell asleep like this!
You can add additional spices or green peppers if you like. I left them out so Elijah could enjoy it too (which he did). 🙂 It tasted great as is.
